Dinner???

Need an idea for dinner tonight? You just may have all these ingredients on hand...

Enchiladas

1 lb hamburger, chicken, or meat of your choice
pkg of taco mix or chili mix
1 small onion
1 cup milk
1 can tomato soup
1 can chopped green chillies (these are optional but don't make it hot, just to add flavor)
4-6 tortillas

Preheat oven to 350. Cook meat in skillet with chopped onion and taco mix. Add soup, milk and chillies (don't drain the chillies). Bring to boil, then simmer 5 min. Place a colander inside a large bowl to separate the liquid from the meat. Get as much liquid out as you can by using a large spoon and pressing down on meat. Place desired amount of meat in each tortilla and fold up. Place them in a greased 9x13 pan. Pour the liquid mixture over the filled tortillas and top with cheese. Bake for approx 15 minutes or until cheese is melted and bubbly. Serve with rice and sour cream! YUMMY!
